Taco Soup

taco-soupYears ago when my youngest was just a baby, I made a drastic lifestyle change so that I could live longer for both of my babies and feel better. I researched and decided that the Zone diet was the choice for me and immediately started making the transition to eating healthier choices and changing the way that we prepared our meals and what recipes we used. Seventy pounds and twelve years later our family is still zone friendly. This recipe is healthy yet still delivers a punch to the taste buds and is filling. It is great for a busy, cooler, evening and yields enough to feed extra guests. We have often used this recipe at Christmas time on the evening that all the family is arriving at different times. Zone Diet Taco Soup

Ingredients:

1 1/2 lbs. ground turkey or lean venison
1 teaspoon Olive Oil
3/4 Cups Onion (1/2 C)
2 cloves of garlic
1 Taco Seasoning Package
1 Can diced Tomato

1 Can Tomato Sauce
1 Can Mexican Rotel Tomato
1 Can Black Beans
1 Can White Corn
2 Cups Water (or desired consistency)

Directions:

Sauté the onion and garlic in the olive oil. Add the ground meat and simmer.

Next, add the taco seasoning. Add the remaining ingredients, bring to a boil, then simmer for 1 hour.

You can use a crock pot and cook on low all day, ready to eat when you get home from work. Sprinkle your bowl with reduced fat, shredded cheddar cheese, sour cream, or guacamole for added color and taste.
